Mực sơ chế, bóc màng, bỏ mai và túi mực, bóp sạch với muối và giấm. Thái ngang con mực thành nhiều miếng hình vành khuyên. Tôm bóc vỏ chừa đuôi, bỏ chỉ đen ở lưng.
Sau đó cho tôm và mực chung vào 1 bát, ướp với 2 thìa rượu trắng và ½ thìa muối tiêu. Để 15 phút cho ngấm.
Lấy 1 túi nylon kéo miệng, cho nửa gói bột chiên vào rồi đổ tôm và mực vào túi bột, kéo miệng túi lại, xóc đều cho bột bao hết lấy tôm và mực.
Chỗ bột chiên còn lại hòa với nước cho thành hỗn hợp sánh. Nhúng tôm và mực vào bột chiên này rồi lăn qua bột chiên xù.
Chuẩn bị 2 chảo, đun dầu ăn cho nóng rồi thả tôm vào rán riêng, mực rán riêng. Để lửa trung bình, rán chín vàng là được. Vớt ra đĩa có giấy thấm dầu.
Ăn ngay khi rán xong là ngon nhất, lớp bột nóng giòn bên trong thịt tôm và mực mềm ngọt. Ăn kèm với sốt maysonaise.
